    Making your own vegan Baileys Irish Cream at home couldn't be easier! And yes, I'm aware that you can now buy a vegan Baileys Irish Cream, but this is better and doesn't have any weird ingredients in it.

    Make up a batch or two before the holidays so you're armed and ready to get cozy! Serve it cold or hot in espresso or coffee, or add it to hot chocolate. This boozy drink is yours to experiment with!

    I whipped it up along with hazelnut hot chocolate and vegan nog as part of the video below! These 3 vegan holiday drinks are exactly what you need to keep your spirits high all season long.

    Making your own boozy vegan Irish cream at home couldn't be easier!

    Ingredients

    • 2 cans full-fat coconut milk
    • ½ C strong brewed coffee
    • ¾ C coconut sugar
    • ¼ teaspoon vanilla powder or 1 teaspoon or vanilla extract
    • ⅛ teaspoon sea salt
    • ½ C Jameson Irish Whiskey

    Instructions

    • Add the contents of both cans of coconut milk to a sauce pan and whisk in the remaining ingredients except the whiskey and heat over medium heat. Bring to a simmer and whisk occasionally for 20 minutes. 
    • After cooking, I strained mine just to remove some of the "skin" that formed on the top. If you whisk more frequently that won't happen! Once strained, allow the mixture to cool before putting it in the fridge.
    • Chill it completely overnight in a sealed jar. Once chilled, you can add the Irish whiskey and store the mixture for up to 10 days in the fridge. If you want to freeze any of it, don't add the whiskey into the whole batch and just to each serving as needed. If you freeze it, consume within 2 months. The mixture will separate when refrigerated or thawed from frozen, but just shake it up before serving over ice. You can also add more whiskey to each individual serving as desired. It's also good over ice with more espresso or coffee! Or add it to a cup of hot coffee or espresso.

      Would there be an alternative to the coconut sugar? I can't seem to come by it in my town.

        you can use regular sugar or brown sugar!

        How about powdered Date sugar, or better yet, Date syrup by the Date Lady on Amazon? All coconut products (oil, cream, milk) have very highly saturated fat like lard. Dr.Greger of NutritionFacts.org had a short video on the only not unhealthy exception is pure coconut BUTTER that is just crushed coconut and because it is still bound to its fiber, just goes through us without depositing its sat. Fats! So I shall try putting coconut butter into unsweet Silk Soy milk. However I have never found a confirmation that the wonderful coconut butter will not damage our arteries from another source. In fact, it seems few even know of Coconut Butter!

      How the hell do you expect the coconut fat to not separate from the liquid when it cools? Because with my one the fat settled on top and in the drink there are bits of coconut fat swimming around 🙁

      Amazing! I swapped the Irish whiskey for Spiced rum as that is all I had at the time, but still worked a treat! Even pleased the non-vegan of the household! Thanks Hot for Food 😘

      It tasted great, but the mixture definitely needed to be heated up on the stove after putting in the fridge (without whiskey) since there was a thick layer of coconut oil on top.

        I didn't find mine to do that multiple times. I just shake it up every time before I do it. Perhaps because the whiskey wasn't already mixed in it did that?
